Dinner

Went for a walk along Norrmälarstrand - a lovely path by the waterfront that leads right into town. Found a comfortable spot over looking the water and Västerbron bridge. The water was choppy as there was quite a wind and for a moment there it looked like rain , but , the rain clouds chose to pass by.

Anna-Stina came to dinner. I made an aubergine lasagne and mixed salad using the lettuce that I've been growing on the balcony - rocket and other kinds - Very tasty

After dinner we sampled the Madeira and we were not disappointed . Very nice it was

Norrmälarstrand i will need another bottle of wine to pronounce that one.

LOL .. me too .. I may have spelled it wrong . NOrr = north ..Mälaren is one of the big lakes flowing into the Baltic and strand = beach . Does that help ?

You live well and I love that about you. Recipe for the aubergine lasagna perhaps?

  I do live well ,Meno , thanks. It's all about loving the little things , I think. I hope you will come and visit again soon
  
  Aubergine lasagna/ or bake
  
  put a layer of veggie mix on the bottom of an ovenproof dish ( shhh leftovers , zuccini , mushrooms aubergine sautéed in garlic and olive oil flavoured with herbs)
  
  Made becahmel sauce with 3dl milk , added 3 garlic cloves , grated cheese , salt pepper .
  
  Roasted or toasted slices of aubergine in heavy iron pan to dry them out a little and give them colour
  
  Assambled " lasagna "
  
  Layer of veggies + little tomato passata + purée
  bechamel sauce
  layer of lasagna pasta sheets
  bechamel
  aubergine layer
  top with mozzarella and bechamel
  Oven 200 C or about 30 minutes until golden and crispy on top
  
  Serve with green salad
  
  I made a dressing with red onion marinated in lime juice herb salt and a little honey and balsamico and then mixed in virgin olive oil just before serving drizzle over salad and toss.
  
  Was impressed with the taste of the lime juice
